Fridge Cleaning: Stir Fry Pad Thai

Makeshift Pad Thai from Relish the Feast

At the end of the week, I usually have a random assortment of food stuffs sitting in the fridge. I think this is a fairly typical situation. You have part of Monday’s lunch and the extra bit of Thursday’s dinner all mingling on the shelves waiting for you to (a) eat them or (b) pitch them. I like to (c) repurpose them. Last week’s randomness resulted in a fairly yummy Stir Fry Pad Thai. This is not a traditional anything btw. That’s just the closest name I could think of to describe what the result on your plate will be.

In a pan, I cooked two, cut-up thin slice pork chops in a mixture of coconut and sesame oil. I sprinkled the meat with powdered garlic & salt. Once I was sure the meat was cooked, I began adding more things to the pan. Bean sprouts, chopped bell & sweet peppers, pineapple chunks, a sprinkle of sesame seeds, a heavy-handed dash of tamari sauce and the remnants of a bag of broccoli slaw (sans dressing). I pulled it off the stove while the peppers still had crunch.

As for the Pad Thai part of this, I had leftover peanut sauce from spring rolls earlier in the week. I wanted to link to the recipe I used, but I cannot for the life of me find it. I wasn’t exact in my measurements anyway (ha, like I ever am). Layer the stir fry on leftover rice and top with the peanut sauce. Voila! You have successfully cleaned up the fridge and made extra meals. As you can see, I used those extra meals for lunches at my desk.
