This drink was totally made by accident. I had about 2 ounces of pineapple juice in a small jar. It was leftover from a can of crushed pineapple that was incorporated into a tropical salsa, so you know, really high quality stuff here. While cooking, I also ended up with a wedge of lemon that was only partially squeezed. I threw that in the cup, too, and put it all in the fridge.
At the end of the day, those 2 ounces were staring at me sadly from the bottom shelf of the fridge. If I left it there, it would linger for a week, get gross and end up down the sink. I had to use it.
I added a few ice cubes and about 1 ounce of vodka. I topped it off with tonic water, not a lot, somewhere in the 1-2 ounce range. It tasted like a lemon drop, but it had a fun tropical twist that cut the tartness. It tasted like sunshine.
